Ingredients
- 8 plantains (can be found in most supermarkets)
- 2 Tablespoons lemon juice
- 1 Tablespoon butter
- 2 onions, sliced
- 2 teaspoons coriander
- 2 cups beef stock
- Red pepper flakes, to taste
An easy way to peel the plantains for matoke is first to cut off the tip and then slit the peel the length of the fruit.
Procedure
- Peel the green banana
- In a bowl, soak in lukewarm water with lemon juice for 2 minutes.
- Melt the butter in a large saucepan.
- Fry the onions and coriander for about 3 minutes.
- Add pepper flakes to taste.
- Add the bananas and cover with the beef stock.
- Simmer on low heat for about 30 to 35 minutes.
Serves 4 to 6.
